The TX output is easily used as a GPIO output
(the TX- pin will be an inverted copy of the TX+ pin)

the RX pin is not so easy to use as its a
differential input and has a 120 Ohm termination resistor
across the input pair, You can use the 7I78 encoder inputs as GPIO
input pins in TTL mode

Not sure why you need the 7I78 inputs, you have 32 inputs available on the 7I76

Merry Christmas to you as well

The reason is cost and size 7i78 is cheaper that 7i76 and minor size. What about use how input step or dir signals?

The step/dir signals on the 7I78 are output only

Another option if you want the most flexibility is to use a 7I75. Then any pin can be used as you wish. You can also use standard parallel port type breakout boards (probotics,cnc4pc etc)

Sure, but you have to be OK with 3.3V signals since the I/O is just the FPGA pins directly (with protection)
