I have read how to wire up for incremental encoder pulse generators, but I want to use a simple analog potentiometers. Is this possible without anything fancy?

Thanks,

I think that's backwards? I want my pots to tell linuxcnc to slow down the spindle or the feed. Maybe I misunderstood it

Yes it is possible. No, you don't need to do anything fancy, you simply need to configure the hostmot2 driver to enable the analog input pins on your 7i76e card. (see pg 18 of the manual for the 7i76e.)

And then set the halui.spindle−override.direct−value pin to true and make suitable HAL connections.
