i would like to create a control panel and I already have an MPG2 using my second port.
can I add another port and wire it to a breakout board so that input signals could be used such as switches and such?

Yes, you can basically add as many parallel ports as you have slots for
(I think 8 ports is the maximum)

Hi
The 9865 chip based card emcPT pointed to should work fine.
Just be aware that CNC4PC are very expensive, you can buy a similar card from Amazon for $9.95 and probably get one from ebay or newegg for $5
If PCI slots are at a premium, the dual headed twin port cards work well too
