So the field supply voltage just sets the output voltage on the output pins and the digital input thresholds for the inputs?

Yes, thats basically true, though the input thresholds are a
software option so for example the MPG inputs on the 7I77
have 2.5V thresholds so they are compatible with MPGs run from 5V
