Hi,
I'm running Ubuntu 14.04 under Parallels on a Mac and am wanting to install LinuxCNC. I downloaded and verified the iso but I can't seem to get it on to a USB in a way that it will boot when it starts up (in the VM)
Any help greatly appreciated.

You don't need to, you can install from an .iso image via a virtual DVD.
If you media is mounted under one OS you may need to remount for it to be recognised by the VM
