Says 7i95T should be supported from 2.0.4.
Can you see a version on the MesaCT screen or in the help menu?

This is what I see when in pcconf, (everything but the 7i95t) I'm starting to wonder if I should be accessing mesaCT from somewhere else?

OK, that is not MesaCT.
Do you get a menu entry for MesaCT?
Try in a terminal, type mesact. If nothing happens, type mesa and press TAB should return all commands starting with mesa.

It's looking like mesaCT is not actually installed. My method to install was right click on mesact_2.1.2_amd64.deb in my downloads folder, and then select open with Gdebi package installer. When I click on Install package, the Gdebi window closes(rather quickly) and there is no indication anything was actually installed.

mesa tab yields:mesaflash and mesa-overlay-control.py

BREAK THROUGH
I tried the command line install, and it worked, thanks to everyone, I think I'm finally away to the races!

Sincere thank you to everyone that is contributing to LinuxCNC, I might be fumbling my way at this point, but I'm so glad I'm moving away from Windows you have no idea.

Ok you are doing it correctly but gdebi should not close, it should report back of successful installation and wait for you to close it.
Try installing if from the terminal, maybe it shows some error there.
Open terminal
cd Downloads
sudo gdebi mesact_2.1.2_amd64.deb
