I really don't know how to do it, so what I'm going to do is use the joystick with the analog inputs, but not with the joystick function, but simply as an input to a potentiometer, as I have used in other applications.

I have now uploaded a couple of Videos where the functionality and setup is explained. This one showcases the use of Encoders and Joysticks. @COFHAL, maybe this helps?

That is a great idea! I'd like to implement it for you.
It will take some time unfortunately, i am realy busy right now, but i'l let you know when it's done.
Can you describe what kind of usecase you have in mind and how you'd like to use the data you get from the HX711?
I guess we need a tare funktion and a varriable to calculate a weight?

I want to calculate brake torque of a wire under torsion and bending
There are three steppers that bend and rotate the wire and i should measure the torque at the same time.

Although i have no clue, how you want to build this using LinuxCNC, i can provide you a Halpin, which displays the current HX711 reading as Number. I guess minium and Maximum readings could be provided too. I'll update you later.
