shellcrash
I do not have access to an opteron based PC. Can you kindly share what exactly you have done to "The script was modified since old AMD AM2 motherboards report CPU temperature, not Core temperature".
Besides: nice results!

Linuxmint 21 Cinnamon
linux-image-5.18.0-2-rt-amd64 kernel
ASUS Tuff Gaming B550 Pro motherboard
AMD Ryzen 5 5600X 6 Core Processor
Corsair Vengeance LPX 32GB (2 X 16GB) DDR4 3600 (PC4-28800) C18 1.35V Desktop Memory
SAMSUNG 980 SSD 1TB PCle 3.0x4, NVMe M.2 2280, Internal Solid State Drive
MSI Gaming AMD Radeon RX 6600 128-bit 8GB GDDR6 DP/HDMI Dual Torx Fans FreeSync DirectX 12 VR Ready Graphics Card (RX 6600 MECH 2X 8G)
Cooler Master MasterWatt 750 Watt Semi-fanless Modular Power Supply, 80 Plus Bronze Certified
While this is not for controlling a machine it is for programming and testing Mesa cards and I'm super happy with the results.

Can you add --show at the end of the latency histogram line, there are some off screen excursions there.
